Pinion (Spanish, meaning nut pine) is widely known for its fine tasting pine nut. It takes three years to produce mature cones from which pine nuts are harvested.
The pinion/pinon grows very slowly and does not bear nuts until it is 25 years old. At 25 years old the tree is normally only five to ten feet tall. At 75 years of age, it produces enough nuts to be commercially important.
The pinion tree is well adapted to dry climate and is known in southern Colorado, eastern Arizona and New Mexico. It grows at elevations of 5000 to 7000 feet. Pinon has been used for centuries for heat and cooking.
It has a high heat content for an evergreen tree, and it smells beautiful. Pinions grow very slowly, rarely reaching 30 feet in height. A tree 30 feet tall could be as much as 200 or 300 years old.
