Mesquite Tree
The mesquite is a small tree of which the tallest species grow to about 50 feet in height. The roots may penetrate the ground to depths of more than 70 feet in search of water. The compound leaves consist of many narrow leaflets.
Its flowers occur in dense, cream-colored catkins about 3 inches long and are followed by clusters of long, narrow, pale yellow beans. The beans contain a sweet pulp and are eaten by both deer and cattle.
The hard wood is sometimes used in furniture and picture frames. In the Southwest, mesquite is highly esteemed by local cooks and chefs for it favorable it imparts to both meats and vegetables.
